When included in a steak and kidney pie or (even better) pudding, grass fed ox kidney needs to be slow cooked, to complement the steak. While this might seem counter-intuitive (aren't we always told to cook offal quickly?) it works well. If you prefer a fast approach, tangy devilled kidney, flash-fried with hot English mustard and cayenne pepper then tempered with cream and served on crunchy toast is an indulgent lunch or quick supper.

Our beef cattle are managed in a high-welfare system that allows them a natural diet suited to their requirements as well as the ability to roam and behave as their instincts dictate. Traceability is as important to us as it is to our customers so all of our beef comes from within our own system. Healthy, clean animals produce healthy, clean offal.
