If you enjoy other kinds of offal but haven't yet tried heart, we'd encourage you to give it a try. Beef heart is, without a doubt, a hard-working muscle. That means it's lean, robustly textured and full of punchy, beefy flavour. It's also a versatile cut, well able to stand up to bold or spicy flavours and is as at home when slow cooked or quickly fried.
The cows spend their days grazing freely on a wide variety of native grasses, wildflowers and herbs, roaming the fields and resting under the trees. In the winter, they are given homegrown, silage and hay to eat throughout the day.

For a really rich treat, stuff the cavity of your ox heart with sausage meat or mushroom duxelle. Sear well on all sides until starting to brown then transfer to a moderate oven. Remove after about 40 minutes for medium rare, letting the heart rest for 15 minutes before carving and serving with creamy mash, vibrant greens and a well-reduced gravy. Alternatively, slice the ox heart thickly and cook over a sizzling hot barbecue as you would a steak. Serve with red cabbage and fennel slaw spiked with lime and sweet chilli.
