The first rule of cooking kidneys is go quick or go slow – anything in between will result in a tough and chewy texture. Devilled kidneys are quickly pan-fried in foaming butter then briefly simmered in sherry, vinegar, fruit jelly, mustard and cayenne pepper. The hot thwack of cayenne is the devilment in this recipe and it really complements the subtlety of the kidney. Alternatively, cook your kidney super-slowly with beef shin, rich stock, ale and herbs before serving under a crackling crust of flaky puff pastry.
