  • Organic chicken wings are perfect served in sticky sauces or with spicy dips. If you have the time, marinate them overnight to get really intense flavours going. Try super-hot chilli combined with sesame and ginger for a Korean take on spicy wings or opt for a classic barbecue sauce amped up with a splash of maple syrup. Chicken wings are also an excellent basis for a decadent gravy. Just roast them in a hot oven with some onions, garlic and root veg until everything's crispy and well browned. Transfer to a large saucepan, cover with chicken stock and allow to simmer gently for a couple of hours. Once all the flavour has been extracted, strain off the liquid and reduce a bit further for a rich, delicious gravy.
